I find most of the store-bought barbecue sauce way too salty, and so I like making a mix of my own barbecue sauce. I combine (and everything is eyeballed and taste-tested as I make it, so I don’t really have particular measurements) tomato sauce, soy sauce, a bit of Worcestershire sauce, crushed garlic, chopped white onions, lots of pepper, and if I want something hot, a bit of chili peppers, in a bowl and I use it both as a marinade for the meat and, when I’m about to use it as a barbecue sauce, I add a little more soy sauce, Worcestershire sauce and tomato sauce and let it simmer for a bit until the texture is thicker.
This barbecue sauce is better than the store-bought ones because you will notice that I did not add any salt to it. This is because the soy sauce is already salty as it is and it usually makes up most of the barbecue sauce already so I consider that as my source of the salty flavor of the sauce. Also, if you want to add anything to it, you know it’s going to work because the ingredients are pretty basic and can go with anything you add.
So if you want to add chili powder or dijon mustard or herbs like basil and rosemary and thyme, it’s all going to work with your basic barbecue sauce. Best of all, it caters to your own taste, so you don’t have to worry about not liking it one bit.
